I hate TOFU... I always have... but at 65 change is inevitable, so here I sit at my computer trying to form words that make no sense to me. I have a VEGAN at home... since he works at Whole Foods he does quite well for himself as far as eating. He has managed to keep dairy and meat free for a long time, keeping himself on a mostly plant based diet. Recently he brought home a couple of containers of Barrett's Garden Farmesan and Fauxcotta... so with nothing planned for dinner last night, I threw some fresh veggies, lasagna noodles, some sauce, and the above mentioned products together and popped it into the oven. When it came out of the oven it smelled delicious and looked pretty much like your typical lasagna. To say that I was a tad bit leery of trying it (see above tofu remark) is so true! I really didn't know what to expect. End result??? I will never make another dairy based lasagna again! It was awesome... I know my fair share of people who cannot eat dairy... and a good deal of folks who want to eat less meat... with more info coming out on eating a more plant based diet you have covered the diary end nicely. Your product not only tasted great but was easy to incorporate into my lasagna even more so than the dairy one I am used to making. Thank You for taking the time to bring your "cheesesy" products to our local Whole Foods... I wish you the best of luck as you move forward with your company!
